fat version simply reduce the oil quantity by half and add one more egg. Also,
the resulting cake more closely resembles the taste and texture of the best
regular cake mixes.
Take 3 cups chocolate cake mix. Add 2 TBL
oil, 2 TBL water and 2 eggs. Drop onto sprayed/greased cookie sheet and/or
flatten with the bottom of a glass dusted with flour or cocoa. Bake at 350
degrees for 10-14 minutes. They'll look very moist but will still be done.
For chocolatier cookies, add an additional 1/2 cup cocoa. To either, use
coconut oil and add 1/2 cup coconut for delicious coconut cookies. Or add
nuts, chocolate chips, butterscotch chips, etc. for variation. To make oreo-type
cookies (either chocolate or vanilla) blend 1 cup shortening with 1 lb.
confectioner's sugar. Dissolve 1 pkg. gelatin in 1/4 warm water until
dissolved. Add to sugar mixture with 1 tsp vanilla. Cool cookies, spread
filling on a cookie and top with another cookie. Voila!
Another chocolate cake cookie recipe:
1 pkg choc cake Mix well. Drop on greased or sprayed cookie sheet. Bake at 350 degrees for 10-12 minutes.
Bake up the chocolate cake mix. Break it up into pieces and put a layer of
the pieces into trifle bowls or truffle dishes. Add a layer of chocolate
pudding (regular or gluten-free), then a layer of whipped topping. Repeat
layers. Drizzle with chocolate syrup and sprinkle with chopped pecans.
