  Namaste Foods Gluten Free / Wheat Free - Spice or Carrot Cake Mix (The Best You've Ever Had!)

The aroma of this moist, scrumptious gluten free/ wheat free cake will make your mouth water but just wait until you taste it! Just add shredded carrot, currants or raisins and nuts if you like for a fabulous carrot cake variation. This cake mix is wheat free, casein free, soy free, dairy free, corn free, gluten free and potato free!

Ingredients:
Organic evaporated cane juice, sweet brown rice flour, brown sugar, tapioca flour, arrowroot flour, rice milk powder, baking soda, salt, cream of tartar, xanthan gum, cinnamon, nutmeg and cloves.

Hint: For the Best Carrot Cake You have ever had add 1 drop Bella Mira Orange Oil to Your Cream Cheese Frosting.

Add eggs, oil and water to make two 9" rounds.

To make pumpkin muffins or cake, mix the spice cake mix with one can of pumpkin but OMIT the egg, water, and oil.  Just the spice cake mix plus the pumpkin makes 36 mini muffins or cake with no added fat.

Substitute pureed pumpkin, applesauce, etc. for some of the oil to reduce the fat and add subtle flavor.

Add 1 TBLS of ground ginger (more or less to taste) to make a delicious gingerbread. 

For a carrot cake variation substitute the 2/3 cup of oil with 1/3 cup applesauce and 1/3 cup oil.  Add 1/3 cup each of fresh shredded carrot, raisins, and chopped walnuts.  Very moist, tender, and tasty!
 

To make gingerbread cookies:

Basic Recipe:
 
1 Namaste Spice Cake Mix
3 eggs
2/3 cup oil
1 TBSP ginger (or more to taste)
1 cup pecans (optional)
 
Mix and let it set for 5 minutes, then mix again.  Scoop out onto cookie
sheets with parchment paper and bake at 350 for about 20-25 minutes (but
watch them because when they brown, it's hard to tell since they are already
dark from spices).  This makes approximately 4 dozen cookies, each about 2 inches in diameter.
