We've done it again - created a moist
and delicious wheat free/ gluten free cake, rich with vanilla flavor from pure ground vanilla beans. You

This cake mix is wheat
free, casein free, soy free, corn free, gluten free and potato free! Hints: I have made a delicious lemon cake by adding 10 drops of Bella Mira Essential Lemon oil. For great variety add Orange, Peppermint, Lime, Rose, Lavender or Jasmine essential oil. Add coconut, chocolate chips, dried fruit, or nuts. Top with fresh strawberries and whipped cream! simply reduce the oil quantity by half and add one more egg. Also, the
resulting cake more closely resembles the taste and texture of the best regular
cake mixes. To make vanilla cookies:
Take 3 cups vanilla cake mix. Add 2 TBL oil,
2 TBL water and 2 eggs. Drop onto sprayed/greased cookie sheet and/or flatten
with the bottom of a glass dusted with flour or cocoa. Bake at 350 degrees
for 10-14 minutes. They'll look very moist but will still be done. For
chocolatier cookies, add an additional 1/2 cup cocoa. To either, use coconut
oil and add 1/2 cup coconut for delicious coconut cookies. Or add nuts,
chocolate chips, butterscotch chips, etc. for variation. To make oreo-type
cookies (either chocolate or vanilla) blend 1 cup shortening with 1 lb.
confectioner's sugar. Dissolve 1 pkg. gelatin in 1/4 warm water until
dissolved. Add to sugar mixture with 1 tsp vanilla. Cool cookies, spread
filling on a cookie and top with another cookie. Voila!
