Namaste Foods Gluten Free / Wheat Free- Vanilla Cake Mix

We've done it again - created a moist and delicious wheat free/ gluten free cake, rich with vanilla flavor from pure ground vanilla beans. You can serve this delectable wheat free/ gluten free cake to friends and family with the confidence that they'll never know it's gluten-free! This cake mix is wheat free, casein free, soy free, corn free, gluten free and potato free!
Add eggs, oil and water to prepare.

Hints: I have made a delicious lemon cake by adding 10 drops of Bella Mira Essential Lemon oil. For great variety add Orange, Peppermint, Lime, Rose, Lavender or Jasmine essential oil. Add coconut, chocolate chips, dried fruit, or nuts. Top with fresh strawberries and whipped cream! Be creative with Cinnamon!

Evaporated cane juice, sweet rice flour, tapioca flour, arrowroot flour, rice milk powder, baking soda, cream of tartar, salt, vanilla, and xanthan gum.

To make a lower fat version simply reduce the oil quantity by half and add one more egg.  Also, the resulting cake more closely resembles the taste and texture of the best regular cake mixes.

Banana Cake:  Using the vanilla cake mix add 3 mashed very ripe bananas to the eggs and oil.  Substitute the water with milk and add to that.  Proceed with recipe according to instructions.


To make a cobbler type cake, use a can of fruit pie filling, such as apple,
blueberries, blackberries, or cherries and spread this filling out in a 9x13 pan. Then take your Vanilla Cake mix and cover your filling.  Not all of the cake mix will be used, just enough over the filling to cover it about an inch thick.  Then take a stick of butter and slice it over your cake mix.  Bake at 375 or until golden brown on top.  Remove from oven and let it cool.  You could also top with vanilla ice cream while warm or after it has cooled.  You may freeze what is left over.

To make vanilla cookies: 

Take 3 cups vanilla cake mix.  Add 2 TBL oil, 2 TBL water and 2 eggs.  Drop onto sprayed/greased cookie sheet and/or flatten with the bottom of a glass dusted with flour or cocoa.  Bake at 350 degrees for 10-14 minutes.  They'll look very moist but will still be done.  For chocolatier cookies, add an additional 1/2 cup cocoa.  To either, use coconut oil and add 1/2 cup coconut for delicious coconut cookies.  Or add nuts, chocolate chips, butterscotch chips, etc. for variation.  To make oreo-type cookies (either chocolate or vanilla) blend 1 cup shortening with 1 lb. confectioner's sugar.  Dissolve 1 pkg. gelatin in 1/4 warm water until dissolved.  Add to sugar mixture with 1 tsp vanilla.  Cool cookies, spread filling on a cookie and top with another cookie.  Voila!
